Gin & Tonic Pancake Recipe

Fancy a boozy G&T pancake brunch this Shrove Tuesday? Well you're in luck. We've got the perfect pancake day recipe with a SIS4ERS DISTILLERY twist. Using our Lemon and Basil Gin for a fluffy pancake with a boozy syrup and any additional toppings you fancy!


200ml tonic
50ml lemon & basil gin
2tsp caster sugar
The juice of 1 lemon

200g self-raising flour
1 egg
2 tbsp caster sugar
200ml tonic
50ml lemon gin
Oil for frying.


Step 1

To make the syrup, pour the Lemon and Basil Gin and the tonic into a pan along with the sugar and lemon juice and let it reduce for a few mins until it becomes syrupy. Put this to one side.

Step 2

For the pancakes, add the flour, egg, sugar, and a pinch of salt into a bowl and whisk dry ingredients. Then slowly whisk in the Lemon and Basil Gin and the tonic until smooth. Add some oil into a pan and turn the heat t medium. Add two tablespoonfuls of batter into the pan and cook for a few mins on each side until golden brown.

Step 3

Serve with your boozy syrup, some lemon zest, and any additional toppings you fancy!
